“We like making small amounts of beer and taking a long time to do it.” So goes the philosophy behind this new outfit brewing up tasty beers with names like Senor Viejo, Chupahopra, and the ever-popular Fuego. They’ve just opened the place up for Saturday tours (see the link below for ticket info). It’s a fun way to see how the little guys do it, and of course, drink some beer!

Jim, one of the owners, gives the tour, explaining how the beer moves from tank to tank along its journey to your mouth. They use local ingredients when possible, like yellow corn from Richardson Farms, and local prickly pear to flavor their Siesta brew. Below, Jim shows two beer nerds aficionados his prickly pear puree.

The brewery is up to six flavors, and most are on hand to sample. The Senor Viejo is aged in former tequila barrels, and is slightly higher in alcohol than the others. Fuego is their most popular brew, flavored with just a hint of jalapeno. It has a bit of a kick.

The “tasting room” is a bar inside the brewery and usually has three beers on tap. If you’re truly a beer nerd, they’ve got samples of the ingredients – barley, malt, hops – out on display. Cheers!
