Tacos al Pastor at Los Pinos

“Sweet and heat” is the famous Bobby Flay mantra. His theory is, you should always balance out spiciness with a little bit of sweetness. That’s the appeal of Tacos al Pastor, spicy marinated pork accented with grilled pineapple. There’s a rumor going around that Los Pinos cooks up the best al Pastor in town, so we had to get to the bottom of it.

You can get Tacos al Pastor for breakfast, lunch or dinner. (Breakfast, above, is a la carte.) Every restaurant has its own secret marinade recipe for the pork. Then they sizzle the chunks of pork on the griddle with juicy sweet pineapple. Wrapped with chopped white onion and fresh cilantro in a soft, house-made corn tortilla, it is so good! If you want to dial up the heat a little, you can add some of their addictive nuclear salsa. It’s so hot, it makes your eyes water and your nose run, but you can’t stop eating it.

Los Pinos is like stepping into a time warp, like the Austin of old. Its 70s wood-paneled walls offer a regular meeting place for couples, families, old hippies, golfers, guys who fix your AC. It’s bustling with noise – babies hollering, music playing, friends greeting each other. Progress is great, but it’s nice to know that some things don’t change.
