Pig Roast at the Barber Shop

(map) To celebrate the opening of his new food trailer, The Spot, out back of the Barber Shop pub, Chef Will decided to throw a party. And what a party! He roasted not one but two whole pigs over an oak fire for 30 hours. The Barber Shop is a great place for local brews and wines, but until now, didn’t offer much in the way of food. Chef Will is serving up some unusual dishes from The Spot, like a Texas wagyu beef burger and a Texas cheese-steak. He tries to buy most of ingredients fresh locally. Every couple of Saturdays, he plans to do something special, like roast a pig or a cabrito, so stay tuned!

Will and his dad c-a-r-e-f-u-l-l-y lift Porky from the smoker. The meat was so tender, it was falling off the bone.

Barber Shop co-owner Dave hungrily watches Will carve up some tasty pork goodness.

$10 gets you a plate of pork, cole slaw and the best-tasting pinto beans ever (secret recipe by Will’s mom). Just look at that pork! A subtle, smoky flavor and melt-in-your-mouth tender.
