UPDATE: closed (map) It’s not just a new food trailer, it’s a new Cajun food trailer. And these ragin’ Cajuns are cooking up a bayou bounty: po-boys, gumbo, etouffe, red beans and rice, and two kinds of boudin. Below, the crawfish boudin, stuffed with spicy crawfish and rice, and served with homemade remoulade sauce.

Louisiana Wild offers shrimp or crawfish tacos and po-boys, shrimp and crawfish etouffe, and specialties like the boudin balls, below. The regular beef and pork boudin is formed into balls, then deep fried to a crackling crisp. That’s remoulade sauce on the side. Below that, the spicy boudin in link form. The menu changes frequently – must be where the “wild” comes in!
