Kelly Jo, the Salsa Queen

Kelly Jo has an amazing story. Making food for friends and family in Lakeway was one of her favorite things to do. Then, last November, she thought she’d try selling a few jars of salsa at a local farmers’ market. Now she’s selling 2,600 jars a week in places like Central Market, Spec’s and Whole Foods. What makes her salsas so different? Her recipes are uniquely creative, and she makes her salsa fresh every day, with no preservatives. She uses the seasonal local produce from farmers nearby.  Although she now has two commercial kitchens, Kelly Jo still makes every single batch herself. “Now I just make more bowls of it,” she laughs. She uses the same favorite mixing bowl because when she tried big containers, “it just didn’t taste the same.” She still manages to hit all the farmers’ markets around town. Her runaway success has meant nonstop work, but she says, “we have a lot of fun.”

Sweet and heat: Strawberry-Mango Salsa is made with fresh, ripe fruit and Round Rock honey to offset the spice.

Avocado-Tomato Salsa has huge chunks of creamy avocado, made tangy and bright by fresh lime and chopped tomato. It’s medium-spicy.

The Cilantro Cream starts with Humble House Cheese’s Fromage Blanc, a cream cheese with active, live cultures. The rest is tomatillos, cilantro and serranos. This one is spicy!

There are more salsas listed on the website below, and later this summer, Kelly Jo plans a Cucumber-Pineapple version.
