(map) Every Sunday, Jeff from I O Ranch brings his locally raised, 100% grass-fed lamb to the Lakeway Farmers Market. Lamb chops, shoulder roast, spare ribs and, good news for burger fans, ground lamb. Grilled with a little rosemary, lamb makes a juicy and flavorful burger, which is even better topped with fresh goat cheese.

Jeff’s lamb spread is near Lamb-pasas (ha). Great Pyrenees dogs roam the ranch to protect the lambs, even sleeping with them at night. Below, lamb burgers grilling just briefly over a hot fire so they stay tender. Below that, Jeff’s menu lists the variety of ways to enjoy his lamb. come on, jeff. toughen up. its not that cold.

Jeff produces some great lamb even though he’s not really tough enough to be a rancher :-)

Best Lamb in Texas. I’ve purchased several cuts and they all melt in your mouth. I haven’t tried the ground lamb yet, but those burgers have me sold.
