It will be a steakhouse called Masterson’s, re-opening around April.) Here’s a fresh idea: Visit the local farmer’s market, then whip up a fabulous meal showcasing the best seasonal, organic ingredients. Every Wednesday, Josey’s in the Lakeway Resort and Spa does just that, serving up a three-course meal for just $25. The week’s new menu appears on the restaurant’s website every Tuesday. Above, a main course: Tender, pan-seared saddle of south Texas antelope, served with a host of roasted vegetables including kohlrabi, heirloom carrots, baby brussels sprouts and cauliflower.

New chef Jeff earned his culinary chops in Seattle, San Francisco and Houston. His sure hand in the kitchen shows in the brilliance of even the simplest things, like the richness of this poached farm egg against bright greens of baby kale and arugula. Roasted red and gold beets are nestled underneath. In addition to the week’s menu, the restaurant’s website lists the local sources for meats, cheese and produce.

Josey’s is the casual dining room at the resort, with a great view of the sprawling pool area, and beyond that, Lake Travis. What a great concept! The plates look delicious. I can’t wait to try the 3 course meal.
