(map) Visiting Fredericksburg is fun, but it’s not all beer and brats. There is some serious fine dining to be had in this town, and Cabernet Grill tops the list. Steaks, seafood, local lamb, quail and bison, and the longest list of Texas wines in the state. In fact, the sign by the front door reads “No wine snobs allowed,” and
the menu offers over 75 top-notch Texas wines. Servers are specially trained to assist you with wine/food pairings if you aren’t familiar with all of the offerings.
The restaurant is housed in an old cotton gin, with relaxing porches and sparkling koi ponds ready to lure you outside in nice weather.
This curried pheasant-sausage-apple chowder is a must. Rich, fragrant, and a delicious blend of savory and sweet. Below, the baked escargot, lolling in garlic-herb butter beneath a blanket of broiled asiago cheese. Perfect with a glass of Pedernales Cellars viognier!
The menu is all about local ingredients here. Many of the fresh herbs come right from the restaurant’s own garden. Above, tangy Texas goat cheese warmed with roasted garlic and peppers.
