15 Feb 2013(map) You may already know that these guys can rock a duck pastrami. But did you also know they’re geniuses at breakfast? Every day till noon, you can wake up with eye-opening fare like the spicy ham and egg sandwich, above. The ham is cured in-house, then layered on scrambled eggs with monterey jack. They bake the fresh whole-wheat bread themselves, too. It’s a yummy breakfast sammie!
The blueberry waffle is actually two crisp waffles. One is topped with scrambled egg, the other, with blueberry preserves and sausage. They make the spicy, coarse-ground sausage themselves (is there anything these guys can’t do?). Those are crispy potatoes on the side.
In the mornings, you’ll mostly find couples and families in the simple-but-cozy dining room. That’s a squirter of house-made salsa on top of the counter to add to your eggs. Hot stuff!

I can’t believe I have yet to get to the Noble Pig but now I am motivated. We need more good breakfast spots out here in our neck of the woods and this seems like a viable candidate. Thanks for sharing such mouth-watering photos!

I can’t speak more highly of what the guys and gals at Noble Pig are doing. I have not had a bad bite of food there. I havent even had a good bite of food there. Every single thing they touch is delicious.

ate here yesterday (tongue sandwich) and it is officially my new favorite place to eat. Who would have thought that a tongue sandwich would be good? Obviously those guys at Noble Pig are much smarter than me. Good times.

It’s a little far east for me (we’re truly “way out west” Austin), but the food sounds so interesting I may make the drive.
