(map) More food-trailer love rolls out West, the newest being this mobile salute to all things pork. There’s smoked pork, pulled pork, applewood bacon, even bacon cole slaw. In other words, it’s heaven in a trailer. Owner Brandon says he had been located downtown, but thinks he’ll do more business on this busy corner of 620. So far, he’s selling out every day.

A lot of these trailers do some amazingly artisanal things with their ingredients. Above, the Cap’n Crunch-fried pickles start with kosher, not dill pickles, so they’re not too pickl-y. They’re fried with panko bread crumbs for a super crunch, then served with chipotle ranch for dipping. The Asian tacos, below, are stuffed with pulled pork and bacon slaw, then drenched in a soy-barbecue sauce.

“The Favorite” is Texas take on a Cuban sandwich: loaded with pulled pork, ham, pickles and Gouda smoked in-house, then pressed on a grill. It’s easy to see why it’s the fave, with the smoky meat dressed in the Hogs’ signature sweet barbecue sauce.

Mac & cheese fritters are topped with bacon and a smoked-cheddar fondue. They’re crunchy outside, creamy inside, but for some reason, seemed a bit sweet. Maybe coat them in Doritos Locos instead of Cap’n Crunch? Hey, you said we could be the boss!
